
Rolls with fruit filling
Description
Delicious baked goods for the whole family. These rolls are great because you can use absolutely any fruit you have on hand for the filling. Fresh fruit can be lightly caramelized beforehand. The rolls can be decorated with powdered sugar, chocolate glaze, or crumbs. Serve warm or chilled. Perfect with tea.

Prepare the necessary ingredients. Preheat the oven to 190 degrees.

For the dough, combine the sugar with the eggs and beat until pale.

Sift the flour and, while continuously beating the eggs with sugar, add it in small portions.

Whisk the dough on medium speed until fluffy.

Line a heat‑proof pan with parchment paper. Spread the dough, level it into an even layer, and place it in the oven. Baking the sponge cake takes about 15 minutes. Check for doneness with a toothpick or a match; it should be completely dry.

While the dough is baking, you can work on the filling. Pour a small amount of water over the gelatin and stir.

Combine the jam, mine is peach, with gelatin and place it over heat. Warm it a little, stirring constantly, do not bring to a boil.

Remove from heat, beat with a mixer until smooth. The filling is ready.

The sponge is ready.

Spread it with fruit filling.

Carefully roll the roulade, wrap it in parchment, and refrigerate for 30‑45 minutes.

For serving, I use chocolate and cookie crumbs. Slice the roll into small pieces and coat each one in the crumbs.
