Step 1

Sift the flour with salt into a large bowl, add the fat and rub with your hands until it resembles crumbs. Add eggs one at a time along with 7 tablespoons of water, then knead the dough. Shape the dough into a ball, wrap it with plastic wrap coated with vegetable oil, and let it rest in a warm place for half an hour.

Rinse the meat and cut into pieces. Peel the onion and cut into 4 parts. Wash the prunes and dry them on a paper towel, then remove the pits. Grind juniper berries and cloves in a mortar. Pass the meat, onion, and prunes through a meat grinder. Add salt, pepper, and sprinkle with the crushed juniper and cloves. Mix thoroughly. Add 3-4 tablespoons of water to the mince and knead again. The mince should be soft and uniform.

Roll out the dough into an oval sheet no thicker than half a centimeter.

Place a layer of filling on it, smooth the surface with wet hands. Roll it up into a roll.

Cut the roll into 12 pieces.

Preheat the oven to 180 °C. Grease a baking sheet and place the roll pieces a few centimeters apart. Pour slightly salted water into the pan until it reaches halfway up the rolls, cover with foil, and bake in the oven for 40 minutes. Then remove the foil and bake for another 10 minutes. Garnish the rolls with fresh herbs when serving.
