
Pancake rolls with filling
Description
A bright and delicious dish can be made from ordinary filled pancakes. This roll will bring the most joy to kids, as each slice contains three pancakes with a sweet filling. Let's face it, not many kids can eat three full-sized pancakes after a meal, especially when sweet pancakes are usually served for dessert. But here, they'll want to try everything.

Prepare the pancake batter: mix flour, sugar, and salt. Add eggs and milk, and stir thoroughly until no lumps remain. Let the batter rest for about 15–20 minutes. Then mix in vegetable oil and cook thin pancakes.

Remove the pits from the cherries and sprinkle the berries with sugar. Set aside for 15–20 minutes so the cherries can absorb the sugar. Then drain off the released juice.

Grind the poppy seeds in a coffee grinder, add half a cup of water and sugar, and simmer over low heat until the liquid has completely evaporated.

For the third filling, take kiwi or banana—whichever you prefer. Peel and slice into not-too-thick strips. Set aside 4 pancakes; we'll need them for shaping the roll. Fill the remaining pancakes with the filling. We'll have 3 types of pancakes with different fillings.

Soak the gelatin in 100 ml of water, then dissolve it over a water bath until the granules are completely dissolved. Beat the sour cream with sugar, add the cooled gelatin, and beat again. Place in the refrigerator for 5–10 minutes, until the mixture slightly thickens.

Place 2 pancakes so that their edges overlap. Spread sour cream cream on the edges where the pancakes overlap—to bind them together. Also spread the cream over the entire surface of the pancakes.

Then we place three pancakes with different fillings and roll them up with plain pancakes into a roll.

Now wrap our roll in foil to prevent the filling from leaking and to help it hold a nice shape. Form another roll from the pancakes with filling. Place the rolls in the refrigerator.

After about an hour, we take out the rolls, unwrap them and slice. Serve at the table.
