
Eggplant Rolls with Cheese

Of course, I understand that you wouldn't call such a dish a novelty, and most of you have probably already made it more than once, but I so wanted to share my favorite recipe for eggplant rolls with cheese that I couldn't help myself. Really—what if someone still isn't familiar with such an amazing and incredibly delicious dish? Then that urgently needs to be fixed. These little rolls have always been and remain my favorites; I make them in winter and summer. Naturally, in warm weather I make them much more often, since summer is when eggplant season begins and you can fully enjoy dishes made from this vegetable. I suggest you start by making eggplant rolls with cheese at home—it's very, very simple, and the taste of this dish is simply divine. Try it for yourself. They can be served warm or chilled.

Rinse the eggplants under water, then slice them carefully into rounds. They should be neither too thick nor too thin—thick enough to roll up easily later. Sprinkle the slices with salt and let them sit for about 15 minutes.

After 15 minutes, pour vegetable oil into a skillet and place it over heat. Fry the eggplants on all sides until golden brown.

Lay the fried eggplant on paper towels to remove excess oil, and set aside to cool. Meanwhile, wash the fresh herbs and chop them finely.

Peel the garlic and grate on a fine grater.

The cheese can be grated on a coarse grater or, like the garlic, on a fine grater.

Now place the cheese, herbs, and garlic in a bowl, add the mayonnaise, and mix everything thoroughly. If needed, you can add a little salt or ground pepper to the filling.

Take the first slice of eggplant and spread it evenly with the prepared filling.

Carefully roll it into a roll, and repeat the same with the remaining eggplant slices. Now our appetizer is ready; if you want it to taste even better, put it in the refrigerator for a couple of hours.
