Description
This simple quick-roll recipe has been known to me since school, and my friends and I often gathered at someone's place after classes to make this delicious treat. Now it's my go-to solution, especially when friends suddenly call to say they're arriving in half an hour—I'm always ready. Just think how easy it is: you make the dough, bake it in the oven for 10–15 minutes, then simply spread any jam or preserves on top—super fast and incredibly tasty. So when your friends call saying they're on their way, remember this quick roll recipe; with it, you'll have a wonderful tea-time treat ready in no time. Serve warm or chilled. Perfect with tea.

So, crack the eggs into a bowl, add sugar, and whisk until fluffy; the volume of the eggs should triple.

Then pour kefir into a glass and use it to neutralize the baking soda, pour this mixture into the beaten eggs with sugar, and mix well.

Add vanilla to the flour and gradually begin pouring the flour into the bowl, mixing until you get a liquid, homogeneous dough.

Line a baking sheet with parchment paper and pour the batter onto it, spreading it evenly over the surface. Place the baking sheet in a preheated oven at 180-200 degrees and bake the cake layer for 10-15 minutes, but watch carefully to prevent burning.

When the cake layer is golden brown, we turn off the oven and cover the table with another sheet of parchment paper, dusting it with powdered sugar. Then we remove the cake layer together with the paper from the baking sheet and flip it, paper-side up, onto the powdered sugar-dusted parchment. We remove the baking paper from the cake layer and spread any jam or preserves over it.

Then, carefully roll the cake into a roll while it's still warm, and sprinkle it with powdered sugar.
