1. Remove the seeds and wash the sweet pepper. Red works best—it looks great on the table.

2. Arrange the pepper halves on a baking sheet lined with parchment paper. Drizzle with olive oil and bake in an oven preheated to 210 degrees.

3. Bake the peppers for about 15 minutes until an appetizing crust forms. Then remove them from the oven, cover the baking sheet with foil (you can transfer the peppers to a deep bowl and cover with a lid) and let them rest for another 10 minutes. Then carefully peel off the skin and cut the pepper flesh into thin strips.

4. To make the filling, put the cheese in a deep bowl and mash it. Add salt, pepper, and oregano, and mix everything together.
