
Potato rolls from dough
Description
The recipe won't take much time. You can prepare potato-filled dough rolls during regular weekdays or while fasting. This recipe is perfect for anyone fasting or following a vegetarian diet. The dough contains neither eggs nor dairy products, and you can endlessly experiment with fillings. I usually pan-fry the rolls beforehand so they keep their shape during baking, but you can skip this preliminary cooking step. In that case, simply place the rolls on the baking sheet with some space between them before baking. It won't affect the taste—in fact, I'd say the result will be even more tender, perfect, for example, for young children. Simple, budget-friendly, filling, and delicious. Serve hot.

Prepare all the ingredients.

Dice the onion, grate the carrot, and slice the bell pepper into thin strips. Sauté the vegetables in a pan until soft, add minced garlic, season with salt, and cook for a few more minutes.

Meanwhile, boil the potatoes, season with salt, and mash into a puree.

In a deep bowl, combine water and 1 tbsp of vegetable oil. Add 0.5 tsp of salt and gradually incorporate the flour. Knead until you have a firm and elastic dough, cover with a towel, and let it rest for 20 minutes.

Cut the dough into small pieces. The size depends on the desired size of the finished rolls.

Roll each piece in flour and shape into a circle. The thinner, the better. Just make sure the rolls don't tear during the process. Place the filling in the center.

Fold the edges on three sides, then roll the dough with the filling into a log. Pinch the seam tightly to seal. Form all the rolls this way until you run out of dough or filling.

Sear the rolls in a pan over high heat on both sides. It is not necessary to fully cook the dough; it is enough for it to just slightly brown.

Place the sautéed vegetables into a heatproof dish.

Place the rolls on top and pour over water mixed with tomato paste (don't forget to add salt to taste). You can skip pre-frying the rolls, but in that case, place them at some distance from each other, as they will increase in size. Bake in the oven at 180 degrees Celsius for about 25 minutes.

Serve the ready-made potato rolls on a bed of vegetables with your favorite sauce. We especially like them with sour cream.
