
Beet Roll-Ups
Description
Suitable for both special occasions and everyday meals. To keep the edges of the appetizer rolls from coming apart, secure them along the length, not the width. Serve the dish chilled. If desired, you can make the rolls ahead of time and refrigerate them for 1 hour.

Step 1

Prepare the listed ingredients. You may use mayonnaise of any fat content, and you can substitute walnuts with peanuts or hazelnuts. Boil the beets in advance for about 25–30 minutes and cool them in ice water.

Taste the briny cheese to gauge how much salt the filling needs. Grate the cheese into a deep bowl using a fine grater. Add mayonnaise of any fat content to the same bowl, and crumble the walnut kernels in your hands. Add salt and ground black pepper, and mix the filling. You can also add a pressed garlic clove or chopped dill and parsley.

Peel the boiled beet, rinse under water, and pat dry with paper towels. Slice into thin slices. If the slices are packed too tightly, you won't be able to roll them into a roll.

Place 1.5 tsp of the prepared cheese filling in the center of each slice.

Join the edges of the beet slices and secure them together with skewers.

Place the beet rolls on a plate and serve, garnished with fresh herbs.
