Cucumber Rolls with Shrimp
Description
Choose cucumbers that are firm, even, and long. It is easiest to make strips with a wide vegetable peeler or a special grater attachment. If you do not have a piping bag, you can fill the rolls using a regular sturdy plastic bag. Put the filling in one corner, snip off the tip, and fill the rolls. Serve with herbs and sauce.
