
Cucumber Rolls

The appetizer is quick and easy to make. Cucumber roll-ups are a magnificent appetizer. I first tried them at my friend’s house—she has been living in Greece for a long time. That’s also where I first made cucumber roll-ups myself. An incredibly tasty dish, and it looks very original. Making this dish in Russia turned out to be a bit harder, but it’s possible! The biggest problem was the lack of Greek yogurt in our stores. I tried replacing it with thick ryazhenka (sold in jars), sour cream, and mayonnaise. Mayonnaise and sour cream worked best. They are thicker, but the cucumber roll-ups lost a little of their charm. The filling flavor comes closest with ryazhenka, but it is very thin, so the filling needs to be chilled in the refrigerator. Let's prepare all the necessary ingredients.

Using a food processor, or skilled hands and a knife, slice the English cucumber into thin enough slices.

Arrange them in a row on a paper towel so it absorbs the excess liquid.

Finely chop the olives, dill, and sun-dried tomatoes with a knife.

In a convenient bowl, mix feta cheese with yogurt and add lemon juice.

Add all the chopped ingredients, season with pepper, and mix well.

Now comes the most interesting part — roll up our little rolls.

At the end of the cucumber, place a spoonful of filling.

And we start rolling. One cucumber yields two rolls. In other words, cut each slice in half. Roll the rolls fairly tightly, then secure them with toothpicks.

Place the finished rolls on a serving dish.
