
Young Zucchini Rolls
Description
Suitable for both holidays and everyday meals. If you prefer not to eat fried dishes, bake the zucchini in the oven. Either way, the result is tender, light, and very tasty! You can modify the filling to your taste, using your favorite ingredients. In this recipe, I use a light filling with herbs, nuts, and vegetables. It turned out tasty, juicy, and aromatic! I highly recommend making rolls from young zucchini, which can serve either as a standalone dish or as a cold or warm appetizer. They can be served warm or chilled.

Prepare all the ingredients.

Do not peel the young zucchini; cut them lengthwise into thin slices.

Fry in vegetable oil on both sides until tender, then transfer to a paper towel to remove excess oil.

Brush the bell peppers with oil, wrap in foil, and bake in an oven preheated to 190°C for 20–30 minutes.

Combine chopped parsley, finely chopped garlic and almonds, basil, salt, and 1 tbsp. olive oil.

Add 1 tsp. lemon juice and mix.

Peel the cooled pepper, dice the flesh, and add it to the filling. Add a few irregular slices of fried zucchini (sliced) as well.

Salt each slice of zucchini and add the filling. Roll up the roll and drizzle with lemon juice.

At this stage, you can serve the ready-made zucchini rolls as a cold appetizer, or you can fry them breaded. To do this, combine the breadcrumbs, salt to taste, garlic powder, and a couple of pinches of lemon zest. You can add black ground pepper.

Coat the rolls in breadcrumbs and fry in a skillet.
