
Georgian-Style Eggplant Rolls

I always try to come up with something new and unusual each time, and that’s how I stumbled upon this recipe for Georgian-style eggplant rolls. I liked the idea of combining walnuts with onion and garlic in the filling, and I was also pleased that they’re very easy and simple to make. As expected, this wonderful dish was a huge hit—the guests emptied the plate in minutes, and I happily received plenty of compliments; in short, everyone was satisfied. To start, we need to slice the eggplants into slices slightly more than half a centimeter thick.

Place the eggplants in a deep bowl and sprinkle with salt; leave for half an hour. When the time is up, drain off the excess liquid and pat the eggplants dry with paper towels.

Pour vegetable oil into a skillet and sauté the onion, diced into small cubes, until golden.

Place the walnuts, sautéed onion, garlic, and adjika in a food processor; add vinegar, spices, and water.

Grind everything into a paste. If needed, salt the filling.

Pour olive oil into a skillet and place it over high heat. Fry the eggplant in the skillet for 1 minute on each side.
