Pork Tenderloin Roulade

Description

A delicious appetizer for any gathering. A pork tenderloin roll turns out very tender and flavorful. It is made fairly quickly. Most of the time is needed for marinating and resting after cooking. This version is perfect for people who follow a healthy diet. You can choose the spices to your taste. I do not recommend using cream with lower fat content. When simmering, the roll should be completely covered with water; the water must not get inside. The water during cooking should only simmer gently, not boil vigorously. If you have a meat thermometer, the internal temperature of the finished roll should be no lower than 70 degrees. After cooking, the roll needs to rest for at least 5 hours. It is better if it rests for about 12 hours. This roll can be stored in the refrigerator for up to 4 days. Serve the appetizer at the table.

    Dissolve the sugar and salt in warm water; add the spices, finely chopped ginger, and a bay leaf.

    Trim the membranes from the tenderloin and place it in the marinade. Store in a cold place and marinate the meat for 8 hours.

    Clean the chicken fillets of membranes and cut into pieces. Place in the blender bowl and add chopped garlic.

    Process until smooth and homogeneous.

    Add the pepper, ginger, and egg whites. Pulse everything again.

    Pour in the cream and blend until smooth.

    Lay out a piece of food-grade plastic wrap and spread half of the chicken mince on it. Flatten it into a rectangle slightly larger and longer than the cut. Pat the cut dry with a paper towel and place it on the mince.

    Using plastic wrap, form a roll and tie the ends tightly. Place in a roasting bag and tie the long ends.

    Take a duck roaster, place a piece of cloth and a small plate on the bottom. Place the roll on top and pour water over it.

    Cover with a lid and bring to a boil. Reduce the heat to the minimum and simmer at 90°C for approximately 1.5 hours. Remove from the water and let cool.
