
Roulade
Description
This bake is a real lifesaver! It especially saves the day when unexpected guests show up and you need to make something in a hurry. The filling can be anything: jam, preserves, boiled condensed milk, chocolate spread, cream, or even honey with nuts. The roll turns out soft and very tender—be sure to try it. The bake is ready. Serve at the table.

Prepare all the ingredients. I’m using thick raspberry jam for the filling. You can use any other jam, cooked condensed milk, chocolate spread, or whatever you happen to have in the fridge right now.

In a deep bowl, beat the eggs with sugar and salt.

Add flour and baking soda.

Mix.

Grease the baking sheet with oil. I use a special mat. Pour the batter and quickly spread it evenly. Don’t worry if it seems a little thin—it will rise.

Bake in an oven preheated to 200 degrees for 5–7 minutes. Do not overbake, or you will get a crisp, cracker-like crust.

Then work quickly before the dough cools. With a spatula, lift the dough and flip it over. Spread with jam or any other filling.

Roll up into a roulade. You can cut it right away into serving pieces and serve.
