
Cherry Roll
Description
The baking is simple and quick. The cherry roll, the recipe for which is given below, is a very interesting and delicious delicacy that was born out of an experiment. I didn't have enough ingredients to make the favorite "drunken cherry" cake for my family, so I had to quickly improvise. Honestly, the cherry roll exceeded all my expectations. It turned out to be very tasty, beautiful, and juicy. I highly recommend trying to make this sweet delight! Especially since preparation takes only 80 minutes, not counting the 24-hour cherry "drunken" marinating process. It can be served with tea or coffee.

Turn regular cherries into "drunken" cherries. To do this, soak pitted fresh or canned (from syrup) cherries in rum or brandy for 24 hours.

Next, in a separate bowl, mix the flour and cocoa, and in another bowl, use a food processor to beat the eggs with sugar.

Then add the flour with cocoa to the egg mixture and carefully mix everything together.

Spread the dough evenly on a baking sheet lined with parchment paper. Bake in the oven at 180 degrees for about 12 minutes.

Cover the warm dough sheet with parchment paper, a kitchen towel, and roll it up. Let it cool at room temperature. Then unroll and remove the paper.

Now let's prepare the filling. Drain the rum and chop the cherries.

On the roll, place pieces of cherries, leave them aside, and now let's prepare the cream.

Then, in a separate bowl, beat the condensed milk, 3 tablespoons of cocoa, and cream thoroughly. (The cream should be cold.) Spread the cream over the cherries.

Roll up the jelly roll, spread the cherry roll's top side with cream, and wrap it in plastic wrap. Refrigerate for about 40 minutes.
