
Salmon and herb roll
Description
Salmon and herb roll is probably my favorite and signature dish for festive occasions. All my regular guests already know: when you're invited to Roxolana's place, expect her signature salmon roll :) This roll always disappears from the table faster than anything else, and it's no wonder — the cake is incredibly tender and airy, the filling is savory fish, and the sour cream sauce... makes your mouth water :) Run to the store for ingredients, grab the recipe, and start cooking!

Step 1

The technique is not simple, so read the instructions carefully :) Take a sauté pan, melt the butter in it. Then add the flour to the butter and quickly mix with a whisk. Next, slowly pour in the milk in a thin stream, stirring constantly, and cook over low heat until thickened.

When it thickens, remove from heat. Add egg yolks and finely grated Parmesan, mix well.

Then add finely chopped herbs to the mixture and stir again.

Beat the egg whites with a whisk until stiff peaks form.

Gently mix the cheese mixture with the egg whites. Stir, but very carefully.

Line a baking sheet with parchment paper and pour the mixture onto it.

Place the baking sheet in the oven and bake for 15 minutes at 180 degrees. Meanwhile, cut the salmon into small pieces.

Mix the salmon with sour cream and herbs, add pepper to taste.

Take the baking sheet out of the oven. Let the cake cool down, then discard the parchment paper it was baked on. Sprinkle the cake with grated cheese.

Evenly distribute the fish filling over the entire crust.

Carefully roll the cake into a roll. Let it sit for about 15 minutes to set. Then slice and serve.
