
Roll with raisins and nuts

In a saucepan, mix half a cup of warm water and half a cup of vegetable oil. Add several tablespoons of granulated sugar, one teaspoon of grated lemon zest, and sifted flour. Mix all the ingredients and knead the dough.

Shape the dough into a ball and wrap it in plastic wrap. Place it in the refrigerator for an hour or two to let it rest.

While the dough rests in the refrigerator, prepare the filling. Chop the nuts with a knife (but not into fine crumbs). Use walnuts and almonds—they go perfectly together.

Rinse the dried fruits under water and pour boiling water over them. Let them soak. Cut the figs into small pieces.

Add the remaining grated lemon zest to the dried fruits. Sprinkle them with ground cardamom and cinnamon as well. Finally, moisten the filling with dry wine.

After the dough has rested in the refrigerator for the required time, take it out and remove the film. Roll out the dough on a work surface into a thin sheet (a few millimeters thick).

Wash the apple and peel it. Remove the core and seeds. Grate the fruit on a coarse grater and spread it evenly over the dough.

Before the apple darkens, place the dried fruit and nut filling on it. Sprinkle all ingredients with one tablespoon of granulated sugar.

Roll the dough with the filling into a log, so that the filling is inside. Grease a baking sheet with oil. Place the log seam-side down on it. Preheat the oven to 180 degrees, bake for 30-40 minutes. Let the roll cool, slice and sprinkle with powdered sugar.
