We wash the tenderloin, dry it, and cut it lengthwise to form an elongated sheet. We rub it with salt and pepper.

In a pan, sauté the mushrooms sliced into pieces in oil. Season with salt and pepper.

Then, fry the garlic in a pan, add the spinach, a little water, and sauté everything for about 5 minutes.

Then add mushrooms to the spinach, mix. Cut the cheese and place everything on top of the pork.

Roll up the roulade and tie it with string. Sear the roulade on all sides over high heat until a delicious crust forms.

Then transfer the cooked roll from the skillet to a baking dish, sprinkle with the sautéed onions on top, and place in a preheated oven at 180 degrees Celsius for 30-40 minutes.
