Year of the Rat Roll
Description
Perfect for the table and with drinks. You can make a juicy, vibrant roll with any melty fillings: hard or processed cheese, cottage cheese or brynza, feta, mozzarella, or suluguni. The key is to spread the filling on a warm omelet and let it cool thoroughly in the refrigerator before slicing. Serve the appetizer at the table.
Instructions

Step 1

Prepare the specified ingredients.

Step 2

Whisk the chicken eggs in a bowl or a deep bowl, adding a little salt.

Wash the green onions and finely chop them. Add them to the bowl with the cottage cheese and a little salt. Mix everything thoroughly, adding mayonnaise of any fat content.
- 4
Step 4

Heat vegetable oil in a pan and pour in the egg mixture. Fry the omelette on both sides for 1–2 minutes each.
- 5
Step 5

Place the omelet on a board or plate, spread the cottage cheese mixture on top, and carefully distribute it over the entire surface.
- 6
Step 6

Roll the omelet into a roll, pressing lightly so the filling is evenly distributed. Place in the refrigerator and chill.
- 7
Step 7

Cut the roll into portion-sized pieces and place on a plate.
- 8
Step 8

Punch holes in the cheese slices using a wide straw. Use the pieces cut from the holes to make ears for the mice from boiled quail eggs, slicing them with a knife. Make the eyes and nose from black peppercorns. Garnish the salad with them and serve.
