Description
Delicious pastry for the whole family. The “Lakomka” roll is a dessert from Soviet childhood; true, the store-bought roll did not always have a cognac soak, and the meringue was very often replaced simply with powdered sugar, but it was still very tasty. My recipe for the “Lakomka” roll matches the original classic dessert as closely as possible. Try making the “Lakomka” roll using this recipe, and you will understand why it is called that.

Prepare the ingredients.

Separate the whites and yolks of 5 eggs, add 40 grams of sugar, vegetable oil, and milk to the yolks, and mix until the sugar dissolves.

Whip the egg whites into a fluffy foam, then add 120 grams of sugar in small portions, continuing to whip at high speed.

Whip the egg whites until stiff peaks form.

Pour the yolk mixture into the whipped egg whites, gently fold with a silicone spatula.

Add flour and baking powder to the egg mixture, and mix until smooth. Do not add it all at once; add in small portions.

Place the dough on a silicone mat or baking paper and spread it evenly. Bake for 20 minutes at 180 degrees.

While the roll is baking, prepare the soaking syrup: make a sugar syrup from 100 ml of water and 100 grams of sugar, cool it to room temperature, then add 1 tbsp of cognac (or rum).

Take the finished sponge cake out of the oven.

Turn the sponge cake over to the other side. Roll the sponge cake into a roulade while it is still hot.

Brush the sponge cake over the entire surface with the prepared syrup using a silicone pastry brush.

Spread the apple jam, smoothing it over the entire surface, leaving about 1.5–2 cm from the edge. Roll it up into a log, place it on a baking sheet seam-side down.

Prepare the sugar syrup: pour 60 grams of sugar into a saucepan, add 20 ml of water, heat without stirring, and simmer for 3 minutes from the moment it starts boiling.

In a thin stream, pour the hot sugar syrup into the whipped egg white, continuing to beat at high mixer speed until stiff peaks form.

Spread the meringue over the sponge roll and place it in the oven at the highest temperature for about 1 minute, until a light golden color forms.
