Description

To make the roll, you will need one large chicken fillet or several medium-sized ones. Cut them open like a book and gently pound with a meat mallet—be careful not to overdo it and turn the fillet into minced meat. It's important that the pounded meat holds its shape so it can be rolled up into a roll. Choose your filling according to your taste: cheese, cream cheese, herbs, pitted olives or black olives, sun-dried tomatoes, etc. The roll is sliced and served chilled.

    Prepare the listed ingredients. Rinse the fillet in water, remove the tendons and membranes, and dry with paper towels.

    Cut it like a book: visually divide its height into three parts, horizontally cut the top third almost all the way through, and then unfold it. Next, cut the bottom third so the fillet opens up flat on the cutting board or work surface.

    Place it skin-side down and pound the flesh with a meat mallet, greasing the mallet with vegetable oil so the flesh doesn't stick to it.

    Now decide which way you will roll the roulade: vertically or horizontally. If you roll it from the shorter side, the roulade will be smaller in size but will have several swirls. If you roll it from the wider side, it will be longer but have one single swirl inside. Spread grated hard cheese or cottage cheese over two-thirds of the fillet. Add olives, sun-dried tomatoes, herbs, etc.

    Tuck the edges of the fillet inward and roll it up as tightly as possible into a roll. Secure the edges with wooden toothpicks or tie with thread or kitchen string to prevent the roll from opening during baking. Preheat the oven to 200°C (390°F), then grease the baking dish and the roll with vegetable oil. Place it on the middle rack and bake for about 20 minutes, then reduce the heat to 170°C (340°F) and continue baking for another 30 minutes. If the surface of the roll browns too quickly, cover it with foil.

    Then remove the roll from the pan onto a cutting board and let it cool for at least half an hour. Slice it into 1 cm thick pieces and arrange on a plate or serving dish. Serve with vegetables and salads.
