
Pork rind roll

First, we take a large piece of pork skin (or several smaller pieces), rinse it under running water, dry it thoroughly, and cut the skin into small rectangles.

We also wash the pork, dry it, and slice it into thin pieces slightly smaller in size than the skin rectangles.

Peel the vegetables, finely chop the onion, and grate the carrot on a coarse grater.

Now we lay out our skin rectangles on a flat surface, place a slice of pork on each, and season everything with ground pepper and salt.

Cooking time depends on the firmness of the casing; once it becomes soft, the rolls can be removed from the pot.
