
Pork Salo Roll

Perfect for the table and with drinks. My dear grandmother shared with me the recipe for making a pork fatback roll. We—her children and grandchildren—did not often gather at her home, but when we did, it was a true feast for the soul and the stomach. I especially remember this dish: it is simple to make, yet so delicious that words cannot do it justice. You simply have to make it and try it! Peel the garlic, then mince it with a press, knife, or mortar—whichever is easiest for you.

The carrots need to be grated on a coarse grater.

Wash the salo to remove any dirt and pat dry (paper towels or napkins work well). Place it skin-side down on a cutting board, flatten it out well, and sprinkle with carrot. You don't need much—you don't want the flavor of boiled carrot to overpower the taste of the salo.

Sprinkle with black pepper and sweet paprika. I like it spicy, so sometimes I also add red hot pepper.

Next, sprinkle with a mix of dried aromatic herbs: cilantro, rosemary, dill, basil — so the roll turns out fragrant.

Spread the garlic on top of everything.

And now we make the roll. Roll the salo very tightly so it doesn't spread apart, and tie it with strong thread or twine.

Place the pork fat roll in a pot of salted water and simmer over low heat for about an hour. You can add a few allspice berries or a bay leaf to the water.

Cool the finished roll in a cool place or in the refrigerator for about 2 hours, and only then remove the strings. Slice the roll into pieces and arrange nicely on a plate.
