
Pork Fatback Roll in Onion Skins

For the roll, we need fatback with a meat layer—not too thick, so it can be rolled into a roll.

Sprinkle the salo with salt and crushed bay leaf. You can also add garlic passed through a garlic press (3-4 cloves).

Roll the salo into a roll as tightly as possible and tie it firmly with sturdy thread.

Put half the onion skins into a large pot, then place the roulade on top and cover everything with the remaining skins. Add enough water to cover the roulade. Cook for about 2 hours. Then leave it in the water until completely cooled.

Remove the cooled roll, place it in a colander for an hour to an hour and a half, and press it from above with a weight. Then trim off the unnecessary threads.

Rub the roll with minced garlic and sprinkle with ground pepper.
