
Ukrainian-Style Salo Roll with Chicken
Description
The recipe won't take much time. This spicy Ukrainian dish will easily replace sausage in your diet. The appetizer is very calorie-rich, yet impossible to stop eating. Best served as a lard and chicken roll with pickled cucumbers and mustard. Serve the appetizer at the table.

1. For the roll, choose thin salo, no more than 2 cm thick. If the salo is thicker, trim off the excess with a knife.

2. Press the garlic cloves into a bowl, add red and black pepper, paprika, and salt. Mix.

3. Rub the salo well with this mixture.

4. Cut the chicken fillet into thin strips. Place it on one half of the bacon, and sprinkle with the spice mixture.

5. Roll the roulade tightly and tie it with string lengthwise and crosswise so it does not unroll and lose its shape.

6. Place the roll in a roasting bag and secure the ends. Bake for 1 to 1.5 hours at 170°C.
