Step 1

Clean the mushrooms and carrots, remove the core from the pepper. Finely chop everything and sauté in a small amount of vegetable oil until cooked.
- 2
Step 2

Add green peas, salt, and pepper. Mix and remove from the heat.
- 3
Step 3

When the filling has cooled, add finely chopped dill and mix well.
- 4
Step 4

Add grated cheese and mayonnaise. Mix well. The filling should not be too runny, so add the mayonnaise gradually.
- 5
Step 5

We wash the meat and trim off the films. Dry the meat, then we need to cut it. There are two options: make a large pocket in the piece of meat, or slice the meat so that it can later be rolled up into a roll. It all depends on what piece of meat you have, and of course on your preference. Cut the meat, spread mustard on the inside, and season with salt and pepper.

Step 6

Put the filling into the pocket. Don't skimp on the filling—try to put in as much as possible.
- 7
Step 7

Secure the edges with toothpicks.

Step 8

Sear the meat with the filling in well-heated oil until a crust forms. This will take about 1 minute per side.

Fold the foil into 3-4 layers and place the meat in the center.
- 10
Step 10

Wrap well so that the juice doesn't leak out during baking.
- 11
Step 11

Bake the meat at 200 degrees for about 1.5 hours. If you want a golden crust on the meat, uncover the foil and bake for another 10-15 minutes.
