Instructions

Step 1

To make this tasty and simple dish, you will need lavash (choose thin and elastic lavash), Korean-style carrots, which you can buy at the market or make yourself, suluguni cheese, and herbs (cilantro).
- 2
Step 2

Take the cheese and tear it by hand into thin strips. If you want your rolls to be more piquant, you can use smoked suluguni instead of regular cheese.
- 3
Step 3

Wash the cilantro and trim it, leaving only the leaves. You can add dill, scall scallions, parsley, basil—any herbs pair beautifully with the cheese.
- 4
Step 4

Cut the lavash into strips whose width should match the width of the suluguni cheese. Use only fresh lavash, as stale lavash will not roll well into little rolls and may tear.
- 5
Step 5

For each strip of lavash, spread a little Korean carrot, herbs, and suluguni cheese. If you like it spicy, pepper the ingredients. Do not add salt — suluguni is already salty enough.

Step 6

Wrap each piece of lavash with filling into a fairly tight roll. Then, with a sharp knife, trim off a corner from one edge so the rolls look nice on the plate. Arrange the lavash rolls with filling on a platter, garnish with herbs, and serve.
