Step 1

Peel the potatoes. Boil them as usual until cooked. Take a masher and mash the potatoes, draining all the cooking liquid beforehand. We won't need it. Add a piece of butter to the potatoes if desired.

Step 2

Add a few tablespoons of starch to the puree to prevent the roll from cracking. Season with salt to taste. Spread the puree onto a baking sheet lined with parchment paper. Bake in the oven at 180 degrees for half an hour.

Step 3

While the roll base is baking, let's prepare the vegetables. Chop the onion, grate the carrots, slice the mushrooms. Sauté in vegetable oil with salt and pepper added, stirring occasionally, until fully cooked.

Step 4

When the potato layer is baked, we take it out. We evenly distribute the cooked vegetables over the potatoes. We chop the herbs and sprinkle them over the filling. Carefully roll the potato layer with the filling into a roll, then brush the top with vegetable oil. Put it back in the oven for just 15 minutes at 200 degrees.
