
Zucchini Roll with Salmon and Cheese
Description
This appetizer comes together quickly and easily. You can make a zucchini roll with salmon and cheese not only as an appetizer, but also as a main course. The roll turns out hearty and can easily stand in for a light lunch or dinner. For the filling, you can use not only cheese and fish—try many other options as well: onions sautéed with carrot, mushrooms, ground meat, and so on. The main requirement is that the filling must be fully cooked. Save this recipe and be sure to try it during zucchini season.

Prepare all the ingredients.

Grate the zucchini on a coarse grater, add a pinch of salt, mix, let stand for 10 minutes, then squeeze out the released juice well.

Add flour, eggs, baking powder, salt, and ground pepper to taste to the squeezed zucchini.

Line the baking sheet with good-quality parchment paper, grease it with oil, and dust it with flour (I used a silicone mat). Pour the dough and spread it into a rectangle no more than 1 cm thick. Bake in the oven at 180°C for about 30 minutes. The edges of the dough should brown lightly.

Transfer the finished crust, still on the parchment or mat, onto a cooling rack to cool. When the crust has cooled slightly, move it to a flat surface, spread it with cheese, and sprinkle with salmon chopped into pieces and chopped herbs.

Roll the pastry with the filling into a tight roll and refrigerate for 30 minutes.
