
Turkey roll with dried apricots

The dish is prepared without unnecessary complications. Here's a simple recipe for turkey roll with apricots for you! The main challenge with this recipe is weaving the bacon into a "basket" shape, but that's only for the most meticulous cooks. I made this dish for an important family celebration, so I went all out with the decoration. However, when I simply bake turkey for dinner for my family, I just secure the bacon with toothpicks—the taste doesn't suffer at all. The finished dish can now be served.

1. First, let's prepare the filling. I pour boiling water over the semolina and apricots separately to let them swell a bit, or I cook the semolina on the stove and then cool it down. I finely chop the onion and sauté it in vegetable oil. Then mix the onion, semolina, breadcrumbs, and chopped apricots. Add spices to taste. The consistency should resemble damp sand.

2. Now place the turkey and pound it to make it flatter. Rub with spices and salt, place the filling in the center, then roll it up into a roulade. Cut the bacon into thin strips and wrap them around the roulade, securing with toothpicks. Alternatively, you could first lay out the bacon strips in a crisscross pattern to form a kind of net, then place the fillet on top. Choose whichever method is more convenient for you.

3. To avoid struggling with toothpicks, as I already mentioned, I simply make a "grid" on a board using bacon, then place the turkey and filling on top, and roll everything together. This roll is roasted in the oven under the grill at 150 degrees for about an hour and a half.
