Turkey roll with mushrooms and tomatoes
Description
This is a fairly simple turkey roll recipe, and I hope you succeed on your first try. The water in the baking dish is essential—it ensures the meat stays juicy and cooks perfectly. Otherwise, there's almost no difference in taste or preparation method.

Step 1

1. Thaw the turkey meat. If you have a bone-in thigh, carefully cut the meat off the bone to create a single piece. Rub it with a mixture of sour cream, mustard, ketchup, and spices (salt, pepper, basil). Roll it up into a log and wrap it in plastic wrap. Let the turkey marinate in the refrigerator for three hours.

2. Meanwhile, prepare the filling. Sauté onions and mushrooms in vegetable oil in a skillet. Add salt to taste. Let the mixture cool down, then add grated cheese, tomatoes, and herbs.

3. Remove the meat, unfold it, place the filling on top, then roll it up again and secure with string or toothpicks. Wrap it in foil. Place it in a baking dish and pour in about 1–2 cups of water. Bake the roll in an oven preheated to 200°C (390°F) for 2 hours. Add more water if necessary. 15 minutes before the end of cooking, unwrap the foil and let the roll brown. To do this, increase the oven temperature to 230°C (450°F).

4. All done! Call your loved ones to the table! The roll can be served hot (then it will be a hot dish) or cold (then it will be a snack).
