
Meat roll with eggs
Description
The dish is prepared without unnecessary complications. Inside this roll, I place roasted peppers, bacon slices, and, of course, boiled eggs. You can experiment with vegetables—such as cucumbers, tomatoes, eggplants, zucchini—and also add cheese or ham. The roll can be baked in the oven or cooked in a steamer or multicooker. The finished dish can be served at the table.

1. Wash, peel, and cut the red pepper into longitudinal slices, place them on a baking sheet skin-side up, and roast at medium temperature until the surface blisters and chars. Then remove and place in a plastic bag to cool. Grate the cheese on a fine grater. Peel and finely chop the onion and garlic. After the pepper has cooled, peel off its skin. In a large bowl, combine the onion, garlic, beef and pork mince, breadcrumbs, cheese, milk, tomato paste, 1 tablespoon of honey, 1 tablespoon of Worcestershire sauce, dried oregano, smoked paprika, ½ tablespoon of wholegrain mustard, dried sage, salt and black pepper to taste, and add 1 raw egg. Mix all ingredients thoroughly, then spread the mixture into a rectangular shape onto plastic wrap folded several times.

2. Boil 3 eggs hard, peel them. Place them on one edge of the rectangle, then alternately add roasted peeled peppers and bacon.

3. Roll the meat mixture into a log starting from the side with the eggs, enclosing the eggs and eliminating any empty space between them. Continue rolling the mixture tightly into a log using plastic wrap to form a compact meat loaf. Place the loaf on a baking tray with a special rack inside to allow the fat to drain. Put the tray in a preheated oven at 175°C (350°F) and bake for 30 minutes. Meanwhile, prepare the glaze by mixing in a bowl 1 tablespoon of honey, 1 teaspoon of Worcestershire sauce, ½ teaspoon of whole grain mustard, and ketchup. After 30 minutes, remove the loaf from the oven and brush it with the glaze. Return the loaf to the oven and bake for another 20–30 minutes, checking the internal temperature periodically with a thermometer. Once the internal temperature of the loaf reaches 71°C (160°F), it is done.

4. Remove the roll from the oven and let it cool for 15 minutes. Serve garnished with parsley leaves.
