
Broccoli Roll with Cream Cheese
Description
It's suitable both for a holiday and for everyday meals. This roll works well for a diet-friendly menu, since the broccoli crust contains not a gram of flour. For the filling I used ricotta, but you can replace it with any other cheese you prefer. You can also add herbs, sun-dried tomatoes, crab sticks, and more to the filling. For this roll you can use broccoli either fresh or frozen. I used frozen: I thawed it completely and then lightly squeezed out the excess moisture. If you use fresh broccoli, boil it for 3 minutes, then transfer it to ice water for about 5 minutes. Then drain the broccoli in a colander and squeeze out the excess moisture. It can be served warm or chilled.

Prepare the necessary ingredients for making the roll. I use frozen broccoli.

Fully thaw the broccoli on the bottom shelf of the refrigerator. Then remove it and squeeze out excess moisture, and transfer it to the blender bowl.

Separate the eggs into whites and yolks. Place the whites in a clean, dry bowl, and add the yolks to the cabbage in the blender.

Puree the cabbage with the egg yolks until smooth.

Beat the egg whites with a mixer and salt (about 1/2 teaspoon) until stiff peaks form.

Add part of the egg whites to the broccoli puree and gently fold with a spatula.

Thus, add all the beaten egg whites and carefully combine them with the chopped broccoli.

Transfer the resulting mixture in an even layer onto a baking sheet lined with parchment paper with a silicone coating. If you are not confident in the quality of your parchment paper, brush it with a thin layer of vegetable oil. Bake in a preheated oven at 180 degrees for 12-15 minutes.

Meanwhile, prepare the filling. Mix cream cheese, sour cream, dried garlic, and oregano. Season with salt and pepper to taste.
