
Eggplant, Egg and Ham Roll
Description
It works for both holidays and everyday meals. For the filling, in addition to eggs and ham, we'll use grated cheese and a little mayonnaise. We'll add a piquant note with garlic. Before serving, chill the roll in the refrigerator; after that, it can be thinly sliced and beautifully arranged on a platter. It's very tasty and festive—such a recipe should be in every home cook's repertoire. It can be served warm or chilled.

Prepare all ingredients. Hard-boil the chicken eggs.

Rinse and dry the eggplants, then slice into thin rounds.

Then fry all the eggplants until cooked through in a pan, 2–3 minutes on each side. Be sure to place the cooked eggplants on paper towels to remove excess oil.

Transfer the grated hard cheese to a bowl. Grate the chicken eggs and garlic on a fine grater into the same bowl.

Add mayonnaise, salt, and pepper. Mix everything.

Arrange the eggplants on foil or plastic wrap, overlapping, in two rows.

Spread the prepared cheese and egg filling over the eggplants.

Then place the ham on top.

Roll everything up carefully into a roll so the filling is inside. That's it—place the roll in the refrigerator for 2–3 hours. After that, you can serve it.
