Description

It pairs perfectly with tea and coffee. The reason the cake is called “chopped” is simple. Even in the days of our great‑grandmothers, home cooks would finely chop frozen butter, mixing it with flour. Such dough has a number of advantages that are appreciated by many housewives even today. The name in honor of the French emperor, however, arose in Russia completely by accident. A pastry chef made a confection where the layers were made from the chopped dough, soaked with custard cream. It was triangular in shape and resembled Napoleon’s headgear.

    Prepare the necessary ingredients.

    Pour the flour into a bowl or onto the table. Place cold butter in the center.

    Knead the dough and divide it into 6–7 pieces. Roll each piece into a ball. Place it in the cold for one and a half hours.

    Roll each dough ball into a sheet. Using a stencil or a plate, cut out a circle. Place it in a baking pan and prick it with a fork.

    Bake the crust until golden in an oven preheated to 180 degrees. Cooking time depends on your oven.

    In the mixer bowl, place the softened butter and beat it. Then add the pastry cream one tablespoon at a time, beating each time. The cream is ready.

    Assemble the cake. Spread each layer with cream.

    Crush one layer into crumbs and sprinkle them over the top and sides of the cake. The chopped cake is ready. Let it soak for 10–12 hours.
