
Roast beef with Yorkshire pudding

Traditionally, roast beef is served with pudding and vegetables. Here's a recipe for roast beef with Yorkshire pudding, perfect for a large gathering. The process requires attention, as you'll need to baste the meat with its juices periodically, otherwise it will turn out dry and tasteless. The pudding also demands attention, as it bakes quite quickly—especially if you're using small molds. It's best to preheat the pudding molds and pour the batter into the hot ones. Ready to cook? Mix salt, pepper, and dried herbs.

We wash the meat, check for small bones, and dry it with paper towels.

Sprinkle the meat with a mixture of salt and spices.

Sprinkle the meat with spices on all sides, or better yet, rub the spices into the meat. Preheat the oven to 250°C (480°F) and place the meat inside to bake for 20–25 minutes. Then reduce the oven temperature to 170–180°C (340–355°F) and continue baking until the meat is fully cooked (about 2.5 hours). Every 20–30 minutes, baste the meat with the juices released during baking.

About 30 minutes before our meat is ready, we can start preparing the pudding. Beat the eggs with milk, add salt and pepper, and gradually add flour.
