
Beef Roast by Gordon Ramsay
Description
The recipe won't take much time. The colorful roast beef should have a pink, juicy center and nicely seared, browned edges. The key is not to overcook the meat so it doesn't turn gray inside. Serve the dish hot with savory pastries, various sauces, and vegetable salads.

Prepare the listed ingredients. Buy boneless beef — the meat. Rinse it under water and cut off all the tendons and membranes. Dry it with a paper towel.

Tie the piece of beef with kitchen twine so that the meat holds its shape.

Rub the meat with salt and ground black pepper. Heat vegetable oil in a skillet, preferably cold-pressed olive oil. Sear the beef on all sides over high heat to immediately seal in the juices. This will take about 5–8 minutes.

Preheat the oven to 200 degrees and bake the meat for about 15 minutes, adding a little oil and sprinkling with dried rosemary.

Immediately after removing from the oven, place the meat on foil and wrap it, letting it rest for 15-20 minutes so the juices inside the roasted beef distribute evenly throughout the meat.

Remove the string and slice the meat into pieces, arranging them on a plate. Serve with grainy mustard, pickles, toasted bread, etc.
