    Prepare the listed ingredients. Peel the root vegetables and rinse them in water. Remove the skin from the pumpkin and also rinse the flesh in water.

    Wash the potatoes and carrots, then cut them into large cubes.

    Cut the pumpkin flesh and onion in the same way. You can use red onion instead of regular onion. If desired, vegetables can be substituted—for example, adding tomatoes, zucchini, bell peppers, etc. Season the chopped vegetables with salt, spices, and drizzle with vegetable oil. Mix well and transfer to a baking dish.

    Rinse the beef tenderloin under water and pat dry with paper towels. Season with salt and pepper, sprinkle both sides with ground Italian herbs. Brush with vegetable oil, preferably olive oil. Place the meat on top of the vegetables in the baking dish.

    Preheat the oven to 200 degrees and bake the dish for 1 hour. Periodically baste the meat with the released juices to prevent it from drying out. If there is not enough juice, add a little hot water, white wine, or broth to the pan.
