First of all, wash the meat and dry it thoroughly. Using a sharp knife, remove any muscle tissues present on the piece, as well as fatty streaks.

Then rub it with salt and generously coat with vegetable oil. Tie the piece of meat with string or kitchen twine. These steps are necessary to prevent the meat from drying out. Light the grill.
