Cajun Roast Beef

Description
The recipe won't take much time. Mix garlic, horseradish, hot pepper sauce, thyme, salt, pepper, Cajun seasoning, olive oil, and malt vinegar in a bowl until well blended. Pierce the entire roast beef all over with a meat fork. Place the roast in a large resealable plastic bag. Spoon in the marinade and gently turn to coat the meat evenly. Refrigerate promptly. When ready, transfer the roast with the remaining marinade into a pot. Do not add water. Cook the roast over low heat for 8–10 hours. Remove from heat, transfer to a serving plate, and let rest for 15 minutes before slicing. Serve hot.
