    1. The main secret of a perfect roast beef is an ideal piece of meat. It should be washed, dried with a paper towel, and freed from all membranes and tendons. To ensure the beef is cooked perfectly, the meat must be cooked as a whole piece. Take the meat out of the refrigerator 1 hour before cooking, so it reaches an even temperature throughout (inside and outside). This way, the roast beef will cook evenly.

    2. Salt the meat on all sides, set it aside for 15 minutes

    3. Chop the rosemary, mix it with olive oil and black pepper. Add rosemary optionally.

    4. Rub the meat with butter and spices. Then transfer it to a baking dish and place in an oven preheated to 230°C for 15 minutes. Then reduce the temperature to 150°C and continue roasting until done, allowing 15–20 minutes per 500 g for medium doneness, or 40–45 minutes for well done.

If you don't own a meat thermometer, you can check the temperature using a toothpick. Simply insert a toothpick into the center of the meat; the color of the released juice will indicate the doneness: red—rare, pink—medium, clear—well done.
