Instructions
- 1
Step 1

Prepare the listed ingredients. Pink salmon can be salted at home or purchased at a store or supermarket.
- 2
Step 2

Rinse the rice in water, pour it into a kazan or saucepan, and cover with hot water. Cook for about 12–15 minutes over moderate heat. Mix the vinegar, sugar, and salt, pour into the cooked rice, and mix again. Let cool for 20–30 minutes. During this time, the rice will absorb the dressing.

Step 3

Beat the chicken egg with a pinch of salt in a bowl or ramekin. Heat the vegetable oil in a frying pan and pour in the egg mixture. Fry the omelet for 2–3 minutes and transfer to a plate to cool.

Step 4

Place the nori sheet smooth side down. Wet your hands with water and spread the cooked rice onto the nori, leaving one edge unfilled.
- 5
Step 5

Place cream cheese and slices of red fish on the edge of the rice.
- 6
Step 6

Cut the omelet and fresh cucumber into strips and place them on the layer of cheese.
- 7
Step 7

Moisten the edge of the nori sheet with water and roll everything into a roll, pressing lightly. Do not press too hard, or the sheet may tear from the amount of filling.

Step 8

Cut the roll in half, and place the two halves on a board side by side. Rinse the knife and cut them into pieces. Serve with pickled ginger, wasabi, and soy sauce.
