
Brown Rice Rolls

Prepare all the ingredients.

Soak the rice in water overnight beforehand. This will not only reduce the cooking time, but also make the rice stickier for rolls.

After rinsing the rice, transfer it to a saucepan. Pour in clean water—the rice-to-water ratio is 1:1.5. Bring to a boil, reduce the heat, cover with a lid, and cook for 20–25 minutes. In a separate small bowl, mix rice vinegar with salt and sugar. Pour the dressing over the cooked rice and stir to combine. Let the rice cool slightly.

Peel the avocado, remove the pit, and cut into long strips. Cut the cucumber into matchsticks.

Place a sheet of nori on the bamboo mat, smooth side down. With wet hands, spread the brown rice in an even layer, leaving a couple of centimeters free along one edge.

Add cream cheese, sliced cucumber, and avocado.

Moisten the free edge and carefully begin rolling the roll using a bamboo mat.

Moisten a very sharp knife with water and cut the rolls into serving-size pieces.
