
Rolls
Description
Sometimes Kappa Maki rolls are lightly drizzled with Unagi sauce, which gives them a mild sweetish flavor. If you have such sauce on hand, try adding it—the taste of the rolls changes significantly. They can be served warm or chilled.

Take all the ingredients. Wash the cucumbers and dry them thoroughly.

Transfer the rice into a kazan, rinse it several times. Pour in water so it is 2 centimeters above the grain, and bring to a boil. As soon as the water boils, cover the kazan tightly with a lid and cook the rice over the lowest heat for 15 minutes.

Meanwhile, prepare the dressing for the rice. To do this, pour rice vinegar into a small bowl, add salt and sugar, and microwave for 15 seconds. Stir the salt and sugar crystals with a teaspoon.

Pour the dressing into the rice and mix thoroughly. Dampen a paper towel, cover the pot with it so that it touches the rice, and leave until completely cooled.

After some time, slice the cucumbers into thin slices, preferably removing the seeds. Cut the nori sheet in half; keeping the spoon and your hands moist with water, spread the rice on the nori, leaving 1 centimeter free on the opposite edge.

Place several cucumber slices in the center, and using a bamboo mat, roll the preparation into a roll.

Moisten the knife with cold water, and cut the roll into equal portion-sized slices.

Often the roll is pressed with a bamboo mat on one side, so when sliced the pieces look like petals. They are arranged in the shape of a flower and served that way. The "Kappa Maki" rolls are ready.
