
Christmas cinnamon cookies

Homemade baked goods for tea. Serve cooled or slightly warm.

It's better to prepare the cookie dough the night before, so it can sit in the refrigerator overnight. Place a piece of butter into a saucepan, add honey, set the saucepan on the stove, and heat while stirring constantly. The mixture should almost begin to boil. Remove from heat, add baking soda, ginger, cinnamon, and nutmeg, and mix thoroughly.

Sift the flour twice through a sieve into a large bowl. Add granulated sugar and salt, then crack in a raw chicken egg.

Also pour the oil-honey mixture into the bowl (after it has cooled slightly). Knead a smooth and elastic dough, then refrigerate it overnight so it cools down well and rests.

In the morning, take out the dough and roll it out thinly on a work surface. Cut out templates from paper or cardboard in the shape of circles of different diameters and Christmas trees. Use them to cut out shapes from the rolled dough.

Preheat the oven to 180 degrees. Place the shapes on a baking sheet and put it in the oven. Bake for ten minutes until they turn a nice brown color.

While the cookies are cooling, prepare the glaze. To do this, beat the egg white with 100 grams of sugar and a pinch of citric acid. Use the glaze to decorate the cookies. Then, once the glaze has set, assemble the cookies into the shape of a bell. Thread your "pieces" onto red ribbons.
