Christmas cookies with icing

Description

The pastry is easy and quick to prepare. This festive holiday cookie is made from a simple dough that is easy to shape and doesn't stick to hands or work surfaces. The finished treats turn out crisp and aromatic. If desired, you can use food coloring added to the icing, making it colorful and very attractive. When the pastry is ready, serve it at the table.

    In a small saucepan, combine brown sugar, honey, salt, and the remaining spices. Place the pan on the stove and turn on the heat. Bring the ingredients to a boil, stirring constantly.

    As soon as the mixture in the saucepan comes to a boil, remove it from the heat. Add the baking soda and quickly stir everything. Then add the piece of butter and stir until completely dissolved. Finally, add the slightly beaten egg. Once the mixture in the saucepan has cooled slightly (since the egg may curdle at high temperature), stir everything again.

    Sift the flour through a sieve several times and gradually add it to the saucepan, slowly kneading the dough. Place the dough onto a work surface and roll it out into a sheet about half a centimeter thick.

    Take special holiday cookie cutters in the shape of Christmas trees, snowmen, deer, and other festive figures. Use them to cut shapes out of the dough. Transfer the shapes onto a baking sheet. Preheat the oven to 180 degrees Celsius and bake the cookies for about 12 minutes. Remove the baked cookies and let them cool.

    While the cookies are baking in the oven, prepare the icing. Beat the chilled raw egg whites with a mixer until stiff, adding a pinch of citric acid. Then gradually add powdered sugar to the egg whites in portions, continuing to beat constantly.

    Transfer the resulting icing into a piping bag or syringe. Then use it to decorate the cookies you've taken out of the oven. Wait for the icing to harden, then serve the cookies.
