
Christmas Cookies with Candied Fruit and Nuts
Description
The recipe will not take much of your time. The Christmas cookie recipe with candied fruit and nuts was not my own invention but comes from the wonderful French-language cookbook *Dessert Techniques*. So I stand behind the accuracy and soundness of the recipe and the method. From myself I will only add that cookies with candied fruit and nuts are truly lovely Christmas baking that will fill your home with a festive mood and the always welcome aromas of fresh homemade baking. I recommend making them! :) Luckily you almost certainly have the ingredients on hand. The baking is done. Serve it at the table.

Let's prepare the ingredients.

Beat the butter with the sugar until light and airy.

Add the egg yolks and beat again.

Sift in half of the flour, then beat again.

Finely chop the nuts with a knife. I used almonds, but you can use whatever nuts you have on hand.

Mix the nuts with the candied fruit.

Mix the remaining flour, candied fruit, nuts, and raisins.

Combine one flour mixture with the other, quickly knead the dough, and roll it into a neat log about 4 cm in diameter.

Wrap in plastic wrap, then refrigerate for 2–3 hours.

Preheat the oven to 180 degrees. Take the dough out of the refrigerator and cut it into rounds about 1 cm thick with a sharp knife.

Line a baking sheet with parchment paper and arrange the cookies on it. Place in a preheated oven and bake for about 15 minutes (as soon as the cookies turn golden brown, they’re done).

Remove the cookies from the oven, place them on a cooling rack, and let cool.

Done! You can serve these cookies with tea, hang them on the Christmas tree, pack them in a pretty box, and give them as gifts :)
