
Christmas Cake with Tangerines

First, prepare the dough. Using a blender at high speed, beat room-temperature eggs with sugar for 5 minutes.

In another bowl, whisk together flour, vanilla, baking powder, and the egg mixture. While blending with a blender, pour in boiling water and oil. Do this for 5 minutes.

Bake the dough in a 20 cm diameter springform pan. The sponge cake will be ready in 35-40 minutes. Preheat the oven to 180 degrees.

Leave the finished biscuit at room temperature for 10-12 hours.

Work on the jam. Peel the tangerines (reserve 2 for decoration) and blend them in a blender. Add sugar to them. Place the mixture over heat and bring it to a boil. Simmer for 10-15 minutes over low heat. Then let the resulting jam cool down.

Prepare the cream. Blend mascarpone, butter, vanilla, and powdered sugar with a blender until smooth.

Prepare the soaking syrup. Mix the juice with water and sugar until fully dissolved. Divide the sponge cake into 4 layers and soak each one.

Now assemble the cake. Place the soaked cake layer, then spread the cream.

Then — the next soaked layer, spread with jam. After that — the same layer, but with cream.

Place the last soaked biscuit on top. Spread the cream evenly over the entire cake.

Put the cake in the refrigerator for 1 hour. Meanwhile, melt the chocolate in a double boiler. Shell the walnuts and peel 1-2 tangerines.

Decorate the chilled sponge cakes with nuts, tangerines, and chocolate. Leave the cake in the refrigerator for 2-3 hours. Have a magical Christmas!
