I recommend using a mix of cinnamon, cloves, nutmeg, and ginger in the recipe. For those who enjoy more piquant flavors, add a pinch of chili pepper and cumin. As for dried fruits, you can soak them beforehand in your favorite juice or alcohol so they become not only softer and more tender, but also more flavorful. You can use any jam you like, but I recommend berry jam. 1. The preparation process is quite simple. First, turn on the oven and let it preheat to 180°C (350°F). 2. Put eggs and brown sugar into a deep bowl. Whisk with a whisk or mixer until combined. 3. Add softened butter and continue beating. 4. Mix in vanilla extract, dried fruits, nuts, and jam. Stir thoroughly. 5. Gradually add flour, sifted together with baking powder and spices, in small portions, mixing to form the dough. Be careful not to overwork it—overly stiff dough will result in a dense cake. 6. Transfer the finished batter into a greased heatproof baking dish and place in the oven. 7. Bake for about 30 minutes, then reduce the temperature to the lowest setting and continue baking for another 45 minutes to allow the cake to dry slightly. Turn off the oven and leave the cake inside for a while longer. 8. This baking method ensures a tender texture while preventing the dough from becoming sticky or gummy due to the jam.
