
Christmas fruitcake with dried fruits
Description
Homemade baked goods for tea. The cake turns out very delicious. If you have candied ginger at home, chop a slice of ginger into small pieces and add it to the batter before baking. The cake will only benefit from adding this ingredient. Anyway, everyone loves it without exception, so I highly recommend it. Serve with tea or coffee.

Step 1

Rinse the raisins under running water and sort them. Remove the stems and impurities. Wash the apricots and cut them into strips. Use dry apricots so that after soaking in brandy they don't turn into mush. Lightly toast the walnuts or almonds in a dry skillet. Place the dried fruits and nuts in a bowl and pour over brandy or rum. Let stand for 30 minutes to soak.

Thaw the butter at room temperature. Place the butter in a bowl and add sugar. I do not recommend using margarine—the taste of the cake will be completely different.

Beat the butter with sugar until smooth. Add a little vanilla.

Add 3 eggs one at a time, constantly beating until the mixture is smooth. Add baking powder to the dough.

Sift the flour. Knead the dough. Add the dried fruits and nuts together with the remaining rum/brandy.

Place the prepared dough into the baking dish.

Use a spatula to spread the raw batter so that there is slightly less batter in the center of the cake than at the sides. Spread the batter from the center toward the edges. This will create a slightly indented cake. During baking, the center will rise. If you skip this step, the top of your cake will puff up and may crack, spoiling its appearance. Preheat the oven to 150-160°C. Bake the cake for up to 1 hour. Check for doneness with a wooden skewer.
